French Baking Techniques
Manouche – a melody of Maltese passion & traditional French technique
At Manouche, we spend every day working to bring back the simple, uncompromised art of French techniques, cleverly sourced ingredients and passion for our craft. When you step into Manouche, you are entering a modern recreation of the traditional French bakeries and bistros. The bakery and bistro support each other, with the bakery’s organic speciality breads and pastries featuring in the bistro’s seasonal menu.
Our Story
Inspired by the warm cafés of Paris and Lyon and named after the soulful Manouche style of jazz that once filled the streets of 1930s France, our brand was born from a simple idea: to honour traditional French baking and cuisine while celebrating local Maltese flavours and ingredients.
What began in Spinola, St. Julian’s has since expanded to multiple locations across the islands — including Valletta, Bay Street, Mosta, Rabat, Birgu, Marsaxlokk and Gozo — each bringing our unique blend of handcrafted breads, seasonal pastries, thoughtfully composed meals, and convivial café culture to locals and visitors alike.
Philosophy
Manouche is the product of expertise and passion, an ode to the rich history and excellence of rustic French cuisine. Craftmanship over compromise is our guiding principle – every loaf, viennoiserie and dish is crafted by hand using classical techniques gained both locally and abroad and incorporating the highest quality ingredients, sourced from local farmers and producers. From fresh morning coffee and pastries to relaxed all-day dining, our team aims to provide a celebration of good food and good company.
What is Manouche?
As the name suggests, the French influence seeps into other aspects of the restaurant as well. The patisserie and bistro seek to immerse visitors in the Parisian atmosphere through almost every sense from the wafting aroma of fresh-baked bread, to the eclectic music and detailed decor. Manouche takes its name from ‘Gypsy jazz’ which originated on the streets of Paris in the 1930s. Those with an authentic love of food will find music in every dish we serve.
